stuffed french toast a la ... me!

okaye. so get yerself some french toast bread. something thick. like a nice crusty loaf of something from your farmer's market. or some texas style toast that your grandpa left in your freezer.

for the batter you need to beat together:

a few eggs
some milk (i use whole or half and half)
several shakes of cinnamon
several shakes of nutmeg
a splash of vanilla

for the filling:

one package of cream cheese
a few tablespoons of sugar (rapadura is what i used)
some more vanilla extract
a splash of orange juice (though pineapple or lemon would work too)
some crushed up walnuts or pecans (optional)

all you do is whip the filling together until it's nice and fluffy. cut a slit in the center of a piece of bread (being careful not to go all the way through) and jam some filling in there real good. then seal it back up as best you can before dredging in the egg batter. next cook in a skillet (i luuurve my well seasoned cast iron one! check your local thrift store people.) over medium heat until "golden brown" on both sides and the filling is getting nice and gooey. slather with butter, some syrup, and more filling (now, topping). enjoy!

add some bacon or sausage too. that never hurts. yum.

remind me never to write a cookbook.

oh and they'll be a butt load of filling left. spread it on english muffins. toddlers love it. so do moms i guess.
